Heat griddle pan. Thinly slice mozzarella. Butter outside of bread. Layer mozzarella, tomato, basil, and mozzarella between bread slices (tomato won’t make bread soggy if layered between the cheese). Cover with grill press and cook until bottom is golden brown, flip sandwich and cook until second side is golden brown.
